Method
 

  1. Heat the oven to 425F (220C).
  2. On a large sheet pan, toss the peppers and onion with 2 tbsp oil, oregano, chili flakes, salt and pepper. Spread out.
  3. Nestle the whole sausages among the vegetables and brush with the remaining oil.
  4. Roast 25 minutes, tossing the vegetables and turning the sausages once, until the sausages are cooked through (165F / 74C) and everything is caramelized.
  5. Slice the sausages if you like and serve in rolls or over rice.
