Ingredients
  

  • 1 lb 450g lean ground beef
  • 2 medium sweet potatoes cubed
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1/2 tsp cumin
  • Salt and pepper
  • Toppings: avocado cottage cheese or Greek yogurt, green onion

Method
 

  1. Heat oven to 425°F (220°C). Toss sweet potato with olive oil, salt and pepper; roast 20–25 minutes.
  2. Meanwhile brown the ground beef over medium-high heat, 6–8 minutes.
  3. Stir in paprika, garlic powder, cumin, salt and pepper; cook to 160°F (71°C).
  4. Build bowls with sweet potato, beef and your toppings.
