Easy Taco Soup

This easy taco soup is a dump-and-simmer dinner that’s ready in 35 minutes and feeds a crowd for pennies. Hearty, cozy and loaded with beef, beans and all the taco toppings you love.

Ingredients
  

  • 1 lb 450g ground beef
  • 1 onion diced
  • 1 packet taco seasoning
  • 1 can black beans drained
  • 1 can kidney beans drained
  • 1 can corn drained
  • 1 can 14 oz diced tomatoes
  • 1 can 8 oz tomato sauce
  • 2 cups beef broth
  • Toppings: cheese sour cream, tortilla chips

Method
 

  1. Brown the ground beef with the onion over medium-high heat to 160°F (71°C).
  2. Stir in taco seasoning, then add beans, corn, tomatoes, tomato sauce and broth.
  3. Simmer 20–25 minutes.
  4. Serve topped with cheese, sour cream and crushed tortilla chips.

Notes

  • Add a ranch seasoning packet for a zesty version.
  • Freezes beautifully for up to 3 months.
  • Make it in a slow cooker: brown beef, then simmer everything on low 4–6 hours.
