Easy One-Bowl Banana Bread

Moist, tender one-bowl banana bread that turns overripe bananas into an easy loaf.

Ingredients
  

  • 3 very ripe bananas mashed
  • 1/3 cup melted butter or oil
  • 3/4 cup brown sugar
  • 1 large egg
  • 1 tsp vanilla
  • 1 tsp baking soda
  • Pinch of salt
  • 1.5 cups all-purpose flour

Method
 

  1. Heat the oven to 350F (175C) and grease a loaf pan.
  2. In one bowl, mash the bananas, then stir in the melted butter, sugar, egg and vanilla.
  3. Sprinkle the baking soda and salt over the top and stir in, then fold in the flour just until combined.
  4. Pour into the pan and bake 50-60 minutes, until a skewer comes out clean. Cool before slicing.

Notes

Fold in 1/2 cup chocolate chips or chopped walnuts for a little extra. If the top darkens too fast, cover loosely with foil for the last 15 minutes.
