Ingredients

  • 1 wheel brie 8 oz / 225 g
  • 1/3 cup whole-berry cranberry sauce about 100 g
  • 2 tbsp pecans chopped
  • 1 tbsp honey
  • 1 tsp fresh rosemary chopped, plus sprigs to garnish
  • crackers, baguette slices and apple slices to serve

Method

  1. Heat the oven to 350°F (175°C). Line a small baking dish with parchment paper.
  2. Score a shallow crosshatch in the top rind with a sharp knife. Do not cut through the sides.
  3. Spread the cranberry sauce over the top and scatter the pecans.
  4. Bake 12 to 15 minutes, until the sides feel soft when gently pressed.
  5. Drizzle with honey, add the rosemary and serve warm with crackers, bread and fruit.

Notes

  • Puff pastry version: wrap in 1 thawed sheet, brush with egg, bake at 400°F (200°C) for 20 to 25 minutes. Rest 10 minutes before cutting.
  • For a 16 oz (450 g) wheel, double the toppings and bake 18 to 22 minutes.
  • Do not leave out for more than 2 hours. Keep leftovers in the fridge up to 3 days.
