Ingredients

  • 1 fully cooked bone-in spiral-cut ham 8 to 10 lb / 3.6 to 4.5 kg
  • 1/2 cup water for the pan
  • 3/4 cup packed brown sugar 150 g
  • 1/4 cup honey
  • 2 tbsp Dijon mustard
  • 2 tbsp orange juice
  • 1/4 tsp ground cloves

Method

  1. Take the ham out of the fridge 1 hour before baking. Heat the oven to 325°F (165°C).
  2. Place the ham cut side down in a roasting pan, add 1/2 cup water and cover tightly with foil.
  3. Bake 12 to 15 minutes per pound, until the center (not touching the bone) reaches 120°F (49°C). About 1 hour 50 minutes for a 9 lb ham.
  4. Meanwhile, simmer the brown sugar, honey, mustard, orange juice and cloves in a small saucepan for 2 to 3 minutes until smooth.
  5. Turn the oven to 400°F (200°C). Uncover the ham and brush with half the glaze.
  6. Bake uncovered 15 to 20 minutes, brushing with the rest of the glaze halfway, until caramelized and the center reaches 140°F (60°C).
  7. Rest 15 minutes, then slice and spoon the pan juices over the top.

Notes

  • Only use a ham labeled fully cooked. Reheat to 140°F; leftover or repackaged ham to 165°F.
  • The glaze can be made up to 3 days ahead.
  • Leftovers keep 3 to 5 days in the fridge or 2 months in the freezer.
