30-Minute Beef and Broccoli Stir-Fry

Ingredients
  

  • 1 lb 450 g flank or sirloin steak, thinly sliced
  • 1 tbsp cornstarch
  • 4 tbsp soy sauce
  • 1 tbsp honey
  • 3 cloves garlic minced
  • 1 tsp grated ginger
  • 1 large head broccoli in florets
  • 2 tbsp neutral oil
  • 1/2 cup water

Method
 

  1. Toss the beef with 1 tbsp cornstarch and 1 tbsp soy sauce; let sit 10 minutes. Mix the remaining soy, honey, 1 tsp cornstarch and water for the sauce.
  2. Steam or microwave the broccoli 2-3 minutes until bright green and crisp-tender.
  3. Heat 1 tbsp oil in a large skillet or wok over high heat. Sear the beef in batches, 1-2 minutes each, until browned; remove.
  4. Add the remaining oil, garlic and ginger and cook 30 seconds. Add the broccoli and beef back, pour in the sauce, and toss 1-2 minutes until glossy and thickened. Serve over rice.

No time to marinate? The cornstarch toss still works with just a 2-3 minute rest while you prep the rest.
